Roasted Veggies with Pepper-Mojo

Hej Hej.

Today I experimented with green turkish pepper. I made a actually not-so-good-looking Mojo sauce, if I may call it that, to roasted veggies in the oven.

It’s very easy, quickly made and healthy.

I used:

  • 2 carrots
  • 6 cocktail tomatoes
  • 6 potatoes
  • 1 red onion
  • seasoning you like
  • 2 tbsp of olive oil

and for the sauce

  • 3 green turkish pepper
  • 1 onion ( I wouldn’t use the reds, since they are too full in taste, and make the sauce brownish)
  • 1 piece of garlic
  • jiuce of 1/2 a lemon
  • 5-10cm of an organic cucumber (optional)
  • salt, pepper

Preheat the oven and prepare a baking tray with baking sheet. Cut all the vegetables and mix them in a bowl with the oil and seasoning. Now spread them on the sheet and put it at 200°C into the oven. Let bake about 30 mins-45 mins, depending on your oven. Just check from time to time and make sure, nothing will burn.

Britta2-4In the meantime you may make the sauce.  Wash and cut the pepper. Cut the onion and garlic. Start frying the pepper and onion, about two minutes before you think, that they are ready throw the garlic in.

Now puree the ingredients with the lemon juice. If you want you can also puree the cucumber. I like the taste because it makes the sauce very fresh. Spice it with salt and pepper.

Voilá. Eat best with a bit of salad on the side.

    Ich mag eigentlich nicht so gern grüne Paprika aber dieser Dipp scheint mir einen Versuch wert zu sein! Und Ofengemüse geht ja immer 🙂

    1. Definitiv. Ich mochte sie auch erst nicht,aber jetzt mag ich den bitteren Geschmack sehr gerne (: nimm aber am besten keine roten Zwiebeln, damit es nicht so unappetitlich wie bei mir aussieht (:
